Preparing the Ribs

Season the Ribs
Preheat your oven to 300°F (150°C). Remove the membrane from the back of the ribs. In a small bowl, mix together salt, black pepper, garlic powder, onion powder, and paprika. Rub this spice mixture all over the ribs.

Wrap and Bake
Wrap the seasoned ribs tightly in aluminum foil and place them on a baking sheet. Bake in the preheated oven for 2.5 to 3 hours, until they are tender.

Prepare the Vegetables
While the ribs are baking, wash and chop the carrots and broccoli into bite-sized pieces.

Sauté the Vegetables
In a large skillet, heat olive oil over medium heat. Add the carrots and sauté for 5 minutes. Then add the broccoli, salt, and black pepper, and continue to sauté for another 5-7 minutes, until vegetables are tender but still crisp.

Plate the Dish
Once the ribs are done, let them rest for a few minutes before cutting. Serve the ribs with a side of coleslaw and warm cornbread, accompanied by the sautéed seasonal vegetables.
