Chowder Preparation

    Cook the Bacon

    In a large pot, cook the diced bacon over medium heat until crispy. Remove the bacon and set aside, leaving the drippings in the pot.

    Sauté the Vegetables

    Add butter to the pot with the bacon drippings. Once melted, add chopped onion and celery. Sauté until softened, about 5 minutes. Add minced garlic and cook for another minute.

    Add Potatoes and Clam Juice

    Stir in the diced potatoes, clam juice, thyme, bay leaf, salt, and black pepper. Bring to a simmer and cook until the potatoes are tender, about 15 minutes.

    Add Clams and Cream

    Once the potatoes are tender, stir in the chopped clams and heavy cream. Simmer for an additional 5 minutes, ensuring not to boil.

    Serve

    Remove the bay leaf, and ladle the chowder into bowls. Top with crispy bacon and chopped parsley for garnish. Serve hot.
