Prepare the Chicken
Cut the chicken thighs into bite-sized pieces and place them in a bowl.

Marinate the Chicken
Add soy sauce, minced garlic, minced ginger, and salt to the chicken. Mix well and let it marinate for at least 30 minutes.

Coat the Chicken
After marinating, sprinkle cornstarch over the chicken pieces and mix to coat evenly.

Heat the Oil
In a large skillet or wok, heat vegetable oil over medium-high heat.

Cook the Chicken
Add the coated chicken pieces to the hot oil. Cook until golden and cooked through, about 5-7 minutes.

Add Szechuan Peppercorns
Once the chicken is cooked, add Szechuan peppercorns and chili oil to the pan. Stir well to combine and let cook for an additional 2-3 minutes.

Finish with Scallions
Add the chopped scallions to the pan and give everything a good toss. Cook for another minute until scallions are slightly wilted.

Transfer the Szechuan Numbing Chicken to a serving dish and enjoy hot.
