Prepare the Ingredients
Begin by cleaning and prepping the pork liver and kidneys. Rinse them under cold water and trim off any excess fat or membranes.

Slice the Liver and Kidneys
Cut the pork liver and kidneys into bite-sized pieces for even cooking.

Chop the Aromatics
Finely chop the garlic and ginger. Slice the scallions into thin rounds, separating the white parts from the green parts.

Heat the Oil
In a large skillet or wok, heat the vegetable oil over medium-high heat until hot.

Cook the Liver and Kidneys
Add the pork liver and kidney pieces to the skillet. Stir-fry for about 5-7 minutes until they are browned and cooked through.

Season the Stir-Fry
Pour in the soy sauce and season with black pepper and salt to taste. Stir to combine all the ingredients.

Add the green parts of the scallions and stir-fry for an additional minute.
