    Prepare the Marinade

    In a mixing bowl, combine the olive oil, lemon juice, minced garlic, salt, and black pepper. Whisk together until well mixed.

    Marinate the Fish

    Place the striped bass fillets in a shallow dish and pour the marinade over the fish. Ensure the fillets are well-coated. Cover with plastic wrap and refrigerate for at least 30 minutes.

    Prepare the Pickling Liquid

    In a saucepan, combine the white vinegar, water, sugar, salt, bay leaves, whole black peppercorns, and smashed garlic cloves. Bring the mixture to a boil over medium heat, stirring until the sugar and salt dissolve.

    Pickle the Peppers

    Once boiling, remove the saucepan from heat and add the sliced bell peppers. Allow the mixture to cool to room temperature, then transfer to a jar or airtight container. Refrigerate for at least 2 hours, preferably overnight.

Cooking the Fish

    Preheat a grill or grill pan over medium-high heat. Remove the striped bass fillets from the marinade, allowing excess marinade to drip off. Grill the fillets for 4-5 minutes on each side, or until the fish flakes easily with a fork.
