    Prepare the Pork Belly

    Cut the pork belly into thick slices (about 1 inch).

    Boil the Pork

    Place the sliced pork belly in a pot, cover with water, and bring to a boil. Once boiling, reduce the heat and let it simmer for about 30 minutes until tender.

    Cool and Slice

    After boiling, remove the pork belly from the pot and let it cool. Once cooled, slice it into thin strips.

    Prepare the Aromatics

    Chop the Chinese leek into 1-inch pieces, mince the ginger and garlic, and break the dried chili peppers into smaller pieces.

    Stir-Fry the Pork

    Heat the vegetable oil in a large pan or wok over medium-high heat. Add the sliced pork belly and stir-fry until it starts to brown, about 5-7 minutes.

    Add Aromatics and Seasoning

    Add the minced garlic, ginger, dried chili peppers, Chinese leek, soy sauce, rice wine, sugar, salt, and black pepper to the pan. Stir-fry for an additional 5-6 minutes until everything is well combined and aromatic.

    Transfer the double-cooked pork to a serving dish and enjoy hot with steamed rice.
