    Start by slicing the pork belly into thin strips, about 1/4 inch thick. This will ensure they cook evenly and are easy to eat.

    Marinate the Pork

    In a bowl, combine soy sauce, rice vinegar, sesame oil, minced garlic, and grated ginger. Add the sliced pork belly to the marinade and let it sit for at least 30 minutes, or up to 2 hours in the refrigerator for more flavor.

    Prepare the Cucumber

    While the pork is marinating, slice the cucumber into thin strips or rounds. Place them in a separate bowl and lightly season with salt and pepper. Set aside to let the flavors meld.
