Prepare the Pork Belly
Start by slicing the pork belly into thin strips, about 1/4 inch thick. This will ensure they cook evenly and are easy to eat.

Marinate the Pork
In a bowl, combine soy sauce, rice vinegar, sesame oil, minced garlic, and grated ginger. Add the sliced pork belly to the marinade and let it sit for at least 30 minutes, or up to 2 hours in the refrigerator for more flavor.

Cook the Pork Belly
Heat a skillet or frying pan over medium-high heat. Once hot, add the marinated pork belly strips in a single layer, making sure not to overcrowd the pan. Cook for about 3-4 minutes on each side or until crispy and nicely browned.

Garnish and Serve
Once the pork belly is cooked, remove from heat. Serve the crispy pork belly alongside the cucumber strips. Garnish with chopped green onions on top for added flavor.
