Slice the Pork
Thinly slice the pork tenderloin against the grain into strips. This will help make the pork more tender.

Season and Coat
In a bowl, mix the sliced pork with cornstarch, salt, and black pepper until evenly coated. Let it marinate for about 15 minutes.

Prepare the Sauce
In a small bowl, combine minced garlic, grated ginger, soy sauce, rice vinegar, chili paste, brown sugar, sesame oil, and water. Mix well and set aside.

Stir-fry the Pork
Heat a large skillet or wok over medium-high heat. Add a tablespoon of oil and stir-fry the coated pork until browned and cooked through, about 5-7 minutes. Remove from pan and set aside.
