    Prepare the Rabbit

    Clean and cut the rabbit meat into serving pieces.

    Chop Vegetables

    Dice the onion, garlic, carrot, and celery into small pieces.

    Sauté the Aromatics

    In a large pot, heat the olive oil over medium heat. Add the diced onion and garlic, cooking until soft and fragrant, about 3-4 minutes.

    Brown the Rabbit

    Add the rabbit pieces to the pot and brown them on all sides, about 5-7 minutes.

    Add Vegetables

    Stir in the diced carrot and celery, cooking for an additional 3-4 minutes until they begin to soften.

    Add Broth and Seasoning

    Pour in the chicken broth, white wine vinegar, and add the pickled peppers. Season with salt, black pepper, and fresh thyme. Bring to a simmer.

    Cover the pot and let the mixture simmer on low heat for about 1 to 1.5 hours, or until the rabbit meat is tender and easily pulls apart.

    Once cooked, remove from heat and serve the pickled rabbit meat warm, garnished with fresh thyme if desired.
