Prepare the Lobster
Begin by boiling water in a large pot. Once boiling, add the whole lobsters and cook for about 8-10 minutes until they turn bright red. Remove the lobsters and let them cool. Once cooled, remove the meat from the shell and cut it into bite-sized pieces.

Prepare the Aromatics
While the lobsters are cooking, finely chop the garlic and ginger. Slice the green onions into thin rounds, separating the white parts from the green parts. Set aside.

Mix Lobster with Cornstarch
In a bowl, combine the lobster meat with cornstarch and a pinch of salt. Mix well to coat the lobster evenly.

Heat the Oil
In a large wok or frying pan, heat the vegetable oil over medium-high heat. Once hot, add the dried red chili peppers and Sichuan peppercorns, stirring for about 30 seconds until fragrant.

Add Aromatics and Sauces
Add the chopped garlic, ginger, and the white parts of the green onions to the wok. Stir-fry for another 1-2 minutes until the garlic is golden brown. Then, add the soy sauce, Shaoxing wine, and sugar. Stir well to coat the lobster.

Finish with Green Onions
Finally, add the green parts of the green onions and stir-fry for an additional minute. Taste and adjust seasoning with salt if necessary.

Serve
Transfer the stir-fried lobster to a serving platter and serve hot, garnished with additional green onions if desired.
