Preparing the Beef Tripe
Clean the beef tripe thoroughly under cold water. Cut it into bite-sized pieces.

Cooking the Beef Tripe
In a large pot, bring 1 liter of water to a boil. Add the cleaned beef tripe and a pinch of salt. Cook for about 1 to 1.5 hours until the tripe is tender. Drain and set aside.

Making the Dressing
In a small pan, dry roast the Szechuan peppercorns and dried red chili peppers over medium heat until fragrant, about 2-3 minutes. Remove from heat and let cool slightly.

Blending the Dressing
In a blender, combine the roasted Szechuan peppercorns, dried red chili peppers, garlic cloves, ginger, soy sauce, rice vinegar, sesame oil, and sugar. Blend until smooth.

Combining Ingredients
In a large mixing bowl, combine the cooked beef tripe with the dressing. Toss until the tripe is well-coated.

Garnishing
Chop the scallions and cilantro. Sprinkle them over the dressed tripe before serving.
