Prepare the Ingredients
Start by washing and cleaning all the vegetables and chicken. Dice the chicken breast into bite-sized pieces, and slice the lotus roots into thin rounds. Chop the mixed chili peppers into small pieces, and mince the garlic and ginger. Chop the spring onions into small pieces, separating the white parts from the green parts.

Heat the Oil
In a large skillet or wok, heat the vegetable oil over medium-high heat until hot.

Sauté the Lotus Roots
In the same skillet, add the sliced lotus roots and stir-fry for about 3-4 minutes until they start to become tender.

Add Chili Peppers
Add the mixed chili peppers to the skillet with the lotus roots. Stir-fry for an additional 2-3 minutes. Season with salt and pepper to taste.

Return the cooked chicken to the skillet, and mix everything well. Cook for another 2 minutes, allowing all the flavors to meld together.
