Prepare the Ingredients
Start by cleaning the soft shell turtle under cold running water. Remove the shell and internal organs, then cut the turtle meat into bite-sized pieces. Rinse well and set aside.

Prepare the Chicken
Cut the black bone chicken into quarters. Rinse under cold water and pat dry with paper towels. Set aside.

Chop Aromatics
Peel and slice the ginger and garlic. Chop the green onions into small pieces, separating the white part from the green tops.

Sauté Aromatics
In a large pot, heat the sesame oil over medium heat. Add the ginger, garlic, and the white parts of the green onions. Sauté until fragrant, about 2-3 minutes.

Add Meats
Add the pieces of black bone chicken and soft shell turtle to the pot. Sauté for about 5-7 minutes until the chicken starts to brown.

Add Liquid
Pour in the water and add the soy sauce and salt. Stir to combine all the ingredients and bring to a boil.

Simmer the Stew
Once it reaches a boil, reduce the heat to low, cover the pot, and let it simmer for about 1.5 to 2 hours, until the meats are tender and flavors meld together.
