Prepare the Marinade
In a mixing bowl, whisk together the soy sauce, rice vinegar, sesame oil, honey, minced garlic, salt, and black pepper until well combined.

Marinate the Pork Belly
Place the thinly sliced pork belly into a shallow dish or a resealable bag. Pour the marinade over the pork belly, ensuring all pieces are well coated. Cover the dish or seal the bag and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.

Prepare the Cucumber
While the pork belly is marinating, thinly slice the cucumber into rounds or half-moons, depending on your preference. Set aside.

Cook the Pork Belly
Heat a large skillet or frying pan over medium-high heat. Once hot, add the marinated pork belly slices in a single layer. Cook for 3-4 minutes on each side until they are crispy and caramelized.

Serve
Remove the pork belly from the skillet and let it rest for a minute. Serve the crispy pork belly slices on a platter with the cucumber on the side. Garnish with chopped green onions for added flavor and presentation.
