    Prepare the Fish

    Rinse the perch fish fillets under cold water and pat them dry with paper towels. Season both sides with salt and black pepper.

    Sauté the Peppers

    In a large skillet, heat the olive oil over medium heat. Add the sliced red and yellow bell peppers and sauté for about 5 minutes, or until they start to soften. Remove from heat and set aside.

    Make the Pickling Liquid

    In a saucepan, combine the white vinegar, water, sugar, minced garlic, dill, and bay leaf. Bring to a boil over medium-high heat, stirring occasionally until the sugar has dissolved.

    Combine Ingredients

    In a large glass jar or container, layer the sautéed peppers and perch fish fillets. Pour the hot pickling liquid over the top, ensuring everything is covered.

    Pickle the Fish

    Seal the jar or container and let it cool to room temperature. Then, refrigerate for at least 24 hours before consuming to allow the flavors to meld.
