    Trim any excess fat from the pork shoulder and cut it into large chunks.

    In a large Dutch oven or heavy pot, heat the olive oil over medium-high heat. Add the pork chunks and sear on all sides until browned, about 6-8 minutes. Remove the pork from the pot and set aside.

    In the same pot, add the chopped onion, garlic, carrots, and celery. Sauté for about 5-7 minutes, or until the vegetables are softened.

    Pour in the chicken broth and red wine, scraping the bottom of the pot to deglaze. Stir in the thyme, bay leaves, salt, and black pepper.
