Preparing the Soup Base

    Clean the Pig Trotters

    Rinse the pig trotters thoroughly under cold water to remove any impurities. If necessary, soak in water for 30 minutes to help with cleaning.

    Peel and quarter the onion, crush the garlic cloves, and slice the ginger into thin pieces. Chop the carrots and celery into large chunks.

    In a large soup pot, combine the cleaned pig trotters, water, onion, garlic, ginger, carrots, celery, bay leaves, salt, and black peppercorns.
