Cooking Instructions

  1. 1

    Prepare the Ingredients

Start by gathering all the ingredients. Clean the soft shell turtle and black bone chicken thoroughly under running water.

  2. 2

    Chop and Cut

Chop the ginseng root, ginger, and garlic. Slice the spring onions into thin pieces.

  3. 3

    Sear the Meats

In a large pot, heat the sesame oil over medium heat. Add the black bone chicken pieces and sear them until golden brown on all sides.

  4. 4

    Add Turtle

Once the chicken is browned, add the cleaned soft shell turtle to the pot. Sear for an additional 5 minutes.

  5. 5

    Add Aromatics

Add the chopped ginseng, ginger, and garlic to the pot. Stir well to combine the ingredients.

  6. 6

    Add Liquids

Pour in the water, then add the soy sauce. Bring the mixture to a boil.

  7. 7

    Simmer the Stew

Once boiling, reduce the heat to low and cover the pot. Allow the stew to simmer for about 1.5 to 2 hours, or until the meats are tender.

  8. 8

    Season to Taste

After simmering, taste the stew and season with salt and pepper to your liking.

  9. 9

    Finish and Serve

Finally, stir in the sliced spring onions just before serving. Serve hot in bowls, and enjoy your ginseng stew.
