    Start by cleaning the baby cuttlefish. Remove the ink sacs and any internal organs. Rinse thoroughly under cold water and pat dry with paper towels.

    Marinate the Cuttlefish

    In a bowl, combine the cleaned baby cuttlefish, grapefruit juice, grapefruit zest, olive oil, minced garlic, salt, and black pepper. Toss everything until the cuttlefish is well coated. Let it marinate for at least 15 minutes.

    While the cuttlefish is marinating, finely slice the scallions. Set aside for later.
