1. Cook the Tonnarelli
Bring a large pot of salted water to a boil. Add the tonnarelli pasta and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta.
2. Sauté the Shrimp
In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant. Add the NC shrimp and cook until they turn pink, about 3-4 minutes. Season with salt and black pepper.
3. Add Vegetables
Add the sliced fennel and chopped scallions to the skillet. Sauté for another 2-3 minutes until the vegetables are softened.
4. Combine Ingredients
Stir in the squid ink and reserved pasta water. Add the cooked tonnarelli and toss to combine, ensuring the pasta is well-coated with the sauce.
5. Finish with Uni
Gently fold in the fresh uni, allowing it to warm through without breaking apart. Adjust seasoning with more salt and black pepper if needed.
6. Serve
Plate the squid ink tonnarelli and garnish with additional chopped scallions if desired. Serve immediately.
