Dough Preparation

1. Prepare the Dough

In a large mixing bowl, whisk together the flour, baking powder, salt, and sugar. In another bowl, beat the eggs, then add milk and vanilla extract. Combine the wet and dry ingredients until just mixed.

2. Heat the Oil

In a deep pot, heat vegetable oil over medium heat until it reaches 350°F (175°C).

3. Fry the Zeppoli

Using a spoon or a small cookie scoop, drop spoonfuls of the dough into the hot oil. Fry until golden brown, about 2-3 minutes on each side. Remove and drain on paper towels.

4. Make the Caramel

In a saucepan over medium heat, combine 1 cup of sugar with 1/4 cup of water. Stir until the sugar dissolves, then allow it to simmer without stirring until it turns a deep amber color. Remove from heat and carefully add in 1/4 cup of Fernet Branca, stirring to combine.

5. Serve

Drizzle the Fernet Branca caramel over the fried zeppoli and serve warm.
