1. Cook the Paccheri
Bring 2 liters of salted water to a boil in a large pot. Add the paccheri pasta and cook according to package instructions until al dente, usually about 12-14 minutes.
2. Prepare the Cheese and Pepper
While the pasta is cooking, finely grate the Pecorino Romano cheese. In a large mixing bowl, combine the grated cheese and freshly cracked black pepper.
3. Combine Pasta and Sauce
Once the pasta is cooked, reserve 1 cup of pasta water, then drain the paccheri. Quickly transfer the drained pasta to the bowl with the cheese and pepper mixture.
4. Create the Sauce
Add a small amount of the reserved pasta water to the cheese and pepper mixture, stirring quickly to create a creamy sauce. Add more pasta water as needed to achieve a smooth consistency.
5. Serve
Toss the pasta well to coat it in the sauce. Serve immediately with additional grated Pecorino Romano and black pepper on top.
