Preparation and Cooking

    Prepare the Turkey

    Preheat your oven to 325°F (165°C). Rinse the turkey inside and out, and pat it dry with paper towels.

    Season the Turkey

    Rub the olive oil all over the turkey. In a small bowl, mix salt, pepper, garlic powder, onion powder, rosemary, and thyme. Rub this seasoning mixture under the skin and inside the cavity of the turkey.

    Roast the Turkey

    Place the turkey breast side up on a rack in a roasting pan. Pour chicken broth into the bottom of the pan. Roast the turkey for approximately 13-15 minutes per pound, or until the internal temperature reaches 165°F (74°C).

    Rest the Turkey

    Remove the turkey from the oven, cover it loosely with aluminum foil, and let it rest for at least 30 minutes before carving.

    Make the Gravy

    While the turkey rests, pour the drippings from the pan into a saucepan. Skim off excess fat, and add a bit more chicken broth if needed. Bring to a boil, then reduce heat and simmer. If desired, thicken with a slurry of cornstarch and water.
