Add Sausage and Chicken
Add the diced Andouille sausage and chicken thighs to the pot. Cook until the chicken is browned, about 5-7 minutes.
Add Garlic and Seasonings
Stir in the minced garlic, Creole seasoning, salt, and black pepper. Cook for an additional 2 minutes until fragrant.
Incorporate Rice and Liquid
Add the long-grain rice, diced tomatoes, chicken broth, and bay leaves. Bring the mixture to a boil.
Simmer
Once boiling, reduce the heat to low, cover the pot, and let it simmer for 20-25 minutes or until the rice is cooked and has absorbed the liquid.
Add Shrimp
In the last 5 minutes of cooking, add the shrimp to the pot and stir gently. Cook until the shrimp are pink and opaque.
Serve
Remove the bay leaves, garnish with sliced green onions, and serve hot.
