    Prepare the Roux

    In a large pot, heat the vegetable oil over medium heat. Add flour and whisk constantly until the roux turns a dark brown color, about 20-25 minutes.

    Sauté the Vegetables

    Add the diced onion, green bell pepper, and celery to the pot. Sauté for 5-7 minutes until the vegetables are softened.

    Add the Garlic and Spices

    Stir in the minced garlic, cayenne pepper, thyme, bay leaves, salt, and black pepper. Cook for an additional 2 minutes.

    Add Broth and Meats

    Gradually pour in the chicken broth, stirring constantly to avoid lumps. Add the smoked duck, Andouille sausage, turtle meat, and okra. Bring the mixture to a boil.

    Simmer the Gumbo

    Reduce the heat to low and simmer uncovered for 45 minutes, stirring occasionally.

    Remove bay leaves before serving. Serve the gumbo hot over cooked rice.
