Prepare the Chicken
In a large bowl, combine the olive oil, minced garlic, chopped thyme, lemon juice, salt, and black pepper. Add the chicken thighs and toss to coat. Marinate for at least 30 minutes.

Cook the Chicken
Heat a large skillet over medium heat. Add the marinated chicken thighs and cook for about 5-7 minutes on each side until golden brown and cooked through. Remove from the skillet and set aside.

Sauté the Vegetables
In the same skillet, add the mixed vegetables and sauté for about 5-7 minutes until they are tender. You may add a splash of vegetable broth if needed to prevent sticking.

Combine and Serve
Return the chicken to the skillet with the vegetables, pour in the remaining vegetable broth, and simmer for another 5 minutes to heat through. Serve hot, garnished with additional thyme if desired.
