    Chop the Vegetables

    Finely chop the cabbage, bell peppers, onions, leeks, and tomatoes. Set aside.

    Sauté the Onions and Leeks

    In a large pot, heat olive oil over medium heat. Add chopped onions and leeks, sautéing until they are translucent, about 5 minutes.

    Add Bell Peppers

    Add the chopped bell peppers to the pot. Cook for an additional 3-4 minutes until they begin to soften.

    Stir in Cabbage

    Add the chopped cabbage to the pot. Stir well to combine all the vegetables.

    Add Tomatoes and Spices

    Stir in the chopped tomatoes, dried oregano, salt, black pepper, and red pepper flakes. Mix well.

    Simmer

    Cover the pot and reduce the heat to low. Let the mixture stew for about 30 minutes, stirring occasionally.

    Serve

    Once the cabbage is tender, remove from heat and serve warm. Adjust seasoning if necessary.
