Add Tomatoes and Spices
Add the diced tomatoes to the pot along with the paprika, cayenne pepper, salt, and black pepper. Stir well and let it simmer for about 5 minutes until the tomatoes break down.

Add Broth and Tilapia
Pour in the vegetable broth and bring the mixture to a gentle boil. Reduce the heat to low and add the tilapia fillets. Cover and let it cook for 10-12 minutes until the fish is cooked through and flakes easily.

Finish with Lemon Juice
Once the tilapia is cooked, drizzle the lemon juice over the stew. Stir gently to combine, and then remove from heat.

Rinse and Cook Rice
If using white rice, rinse it under cold water until the water runs clear. In a separate pot, combine the rice, water, and salt. Bring to a boil over high heat, then reduce heat to low, cover, and simmer for 18-20 minutes until the rice is tender and the water is absorbed.

For Jollof rice, follow your preferred recipe or use a pre-packaged mix. Typically, sauté onions and tomatoes, add spices, then mix in rice and water, cooking until done.
