    Prepare the Pumpkin Seeds

    Dry roast the pumpkin seeds in a pan over medium heat for about 5-7 minutes, stirring frequently until they are golden brown. Allow to cool, then blend into a coarse powder.

    Prepare the Shrimp

    Peel and devein the shrimp. Rinse under cold water and pat dry with a paper towel.

    Chop the Vegetables

    Finely chop the onion, garlic, and ginger. Set aside.

    Sauté the Aromatics

    In a large pot, heat the palm oil over medium heat. Add the chopped onion, garlic, and ginger, and sauté until fragrant and the onion is translucent, about 5 minutes.

    Add Spices

    Stir in the scotch bonnet pepper, thyme, bay leaves, salt, and black pepper. Cook for another 2 minutes to allow the flavors to meld.

    Cook the Shrimp

    Add the shrimp to the pot and cook until they turn pink, about 3-4 minutes. Stir occasionally to ensure even cooking.

    Incorporate the Egusi

    Gradually add the ground pumpkin seeds to the pot, stirring continuously to avoid lumps. Cook for an additional 5-7 minutes, adding a splash of water if the sauce becomes too thick.

    Finish and Serve

    Once the sauce has thickened and the shrimp are cooked through, remove from heat. Garnish with chopped parsley and serve with lemon wedges on the side.
