Preparation

    Prepare the Cauliflower

    Remove the leaves and stem from the cauliflower. Cut it into florets and pulse in a food processor until it resembles rice. Set aside.

    Chop the Vegetables

    Dice the onion, bell pepper, and carrots. Set aside.

    Prepare the Shrimp

    If not already done, peel and devein the shrimp. Rinse and pat dry with paper towels.

Cooking

    Sauté the Vegetables

    In a large skillet, heat olive oil over medium heat. Add the diced onions and cook until translucent, about 3-4 minutes. Add the bell pepper, carrots, and minced garlic. Sauté for an additional 5 minutes until the vegetables are tender.

    Cook the Shrimp

    Add the shrimp to the skillet and season with salt, black pepper, oregano, and thyme. Cook until the shrimp turn pink and opaque, about 3-4 minutes.

    Combine with Cauliflower

    Stir in the processed cauliflower and green peas. Cook for another 3-5 minutes until the cauliflower is tender and heated through. Adjust seasoning if necessary.

    Finish and Serve

    Remove from heat and stir in fresh parsley. Serve hot as a main dish or side.
