    If using fresh cassava leaves, wash them thoroughly and chop them finely. If using frozen cassava leaves, thaw them and set aside.

    Ensure that the shrimp is peeled and deveined. Rinse under cold water and set aside.

    Cook the Aromatics

    In a large pot, heat the palm oil over medium heat. Add the chopped onions and sliced leeks. Sauté until they are soft and translucent, about 5-7 minutes.

    Stir in the minced garlic, chopped scotch bonnet pepper, salt, black pepper, and Maggi cube (if using). Cook for an additional 2 minutes until fragrant.

    Incorporate the Cassava Leaves

    Gradually add the chopped cassava leaves to the pot, stirring to combine with the aromatics. Cook for about 10 minutes, allowing the leaves to wilt and release their flavor.

    Add the peeled shrimp to the pot and stir well. Continue to cook for another 5-7 minutes, or until the shrimp turn pink and are cooked through.
