Preparation

    Prepare the Seafood

    Rinse the salmon fillets and shrimp under cold water. Pat dry with paper towels.

    Chop the Vegetables

    Peel and cut the carrots into thin slices. Trim the ends of the green beans. Cut the squash into half-moons. Dice the onion and bell pepper into small pieces. Chop the scallions, separating the white and green parts.

Cooking

    Sauté the Vegetables

    In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the diced onion, carrots, and bell pepper. Sauté for about 5 minutes until they begin to soften.

    Add Green Beans and Squash

    Add the green beans and squash to the skillet. Season with salt, black pepper, garlic powder, paprika, and dried thyme. Stir well and cook for another 5 minutes until the vegetables are tender.

    Cook the Seafood

    Push the vegetables to the side of the skillet and add 1 tablespoon of olive oil. Place the salmon fillets skin-side down in the skillet and cook for about 4-5 minutes. Add the shrimp and let everything cook together for an additional 4-5 minutes, or until the salmon is cooked through and the shrimp are pink.

    Garnish and Serve

    Once everything is cooked, sprinkle the chopped scallion greens over the dish for added flavor and color. Serve hot.
