    Mix the Ingredients

    In a large saucepan, combine 4 cups of water, brown sugar, and granulated sugar. Stir over medium heat until the sugars dissolve completely.

    Add the Flavorings

    Add the sassafras root bark, sarsaparilla root, vanilla extract, and wintergreen extract to the saucepan. Bring the mixture to a gentle boil, then reduce the heat and let it simmer for about 15 minutes.

    Cool the Mixture

    Remove the saucepan from heat and allow the mixture to cool to room temperature. Once cooled, strain the liquid through a fine mesh sieve or cheesecloth to remove the solid ingredients.

    Prepare for Fermentation

    Pour the strained mixture back into the saucepan. Add 1 teaspoon of active dry yeast and stir gently to combine. Cover the saucepan with a clean cloth and let it sit for about 30 minutes to allow the yeast to activate.

    Bottle the Root Beer

    Once the yeast has activated, pour the mixture into clean bottles, leaving about an inch of space at the top. Seal the bottles tightly.

    Let the bottles sit at room temperature for 3 to 5 days to ferment. Check the bottles daily to ensure they are not over-carbonated. Once ready, transfer them to the refrigerator.
