    Prepare the Ingredients

    Chop the onion, mince the garlic, and rinse the red beans if using canned.

    Measure the Rice

    Measure 1 cup of long-grain rice and set aside.

Cooking

    Sauté the Aromatics

    In a large skillet or pot, heat 2 tablespoons of coconut oil over medium heat. Add the chopped onion and minced garlic, sautéing until the onion is translucent, about 3-4 minutes.

    Add Rice and Spices

    Add the rice, dried thyme, cumin, paprika, salt, black pepper, and chili powder (to taste) to the skillet. Stir for about 1-2 minutes to toast the rice and spices.

    Combine with Liquids

    Pour in the coconut milk and diced tomatoes (with juices). Stir well to combine all ingredients.

    Simmer

    Bring the mixture to a gentle boil, then reduce the heat to low. Cover and let it simmer for about 15-20 minutes, or until the rice is cooked and has absorbed most of the liquid.

    Add Red Beans

    Once the rice is cooked, gently fold in the red beans. Cover and let cook for an additional 5 minutes to warm the beans through.

    Serve

    Remove from heat, fluff the rice with a fork, and serve warm. Enjoy your Red Bean & Rice!
