    Toast the Pumpkin Seeds

    In a dry skillet over medium heat, toast the pumpkin seeds for about 5-7 minutes, stirring frequently until they are fragrant and slightly golden. Remove from heat and let cool.

    Chop the Vegetables

    Finely chop the onion, ginger, and garlic. If using fresh herbs, chop them finely as well.

    Combine Ingredients

    In a food processor, combine the toasted pumpkin seeds, chopped onion, ginger, garlic, fresh herbs, cumin powder, paprika, salt, black pepper, and chili powder. Pulse until the mixture is coarsely blended but not pureed.

    Add Binding Ingredients

    Transfer the mixture to a bowl, then add flour and water. Mix well until everything is combined and holds together. If the mixture is too dry, add a little more water; if too wet, add a bit more flour.

    Form Patties

    With wet hands, take a portion of the mixture and shape it into patties, about 2-3 inches in diameter.

    Cook the Patties

    In a skillet, heat a tablespoon of oil over medium heat. Place the patties in the skillet and cook for about 4-5 minutes on each side until they are golden brown and crispy.

    Remove the patties from the skillet and place them on a paper towel to absorb excess oil. Serve warm with your favorite dipping sauce or salad.
