Preparing the Fish

Season the Fish
Pat the tilapia filets dry with paper towels. Season both sides with salt and black pepper.

Heat the Oil
In a large skillet, heat the olive oil over medium-high heat until shimmering.

Pan Fry the Fish
Carefully add the seasoned tilapia filets to the skillet. Cook for 3-4 minutes on each side until golden brown and cooked through. Squeeze fresh lemon juice over the fish before serving.

In a separate pot, add the fresh greens, water, and 0.5 tsp of salt. Bring to a boil and then reduce heat to low. Simmer for about 5-7 minutes until the greens are tender.

Peel and slice the plantains diagonally into 1-inch thick pieces. In a frying pan, heat the oil over medium heat. Fry the plantain slices for about 2-3 minutes on each side, until they are golden brown. Remove and drain on paper towels.
