    Prep the Vegetables

    Wash the okra and slice it into 1/2 inch rounds. Chop the tomatoes, onion, leeks, and bell pepper into small pieces. Mince the garlic.

    In a large pot, heat the olive oil over medium heat. Add the chopped onions, leeks, and bell pepper, sautéing until softened, about 5-7 minutes.

    Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant.

    Add the Tomatoes and Spices

    Add the chopped tomatoes, thyme, cumin, paprika, salt, and black pepper. Stir well and cook for about 5 minutes until the tomatoes start to break down.

    Incorporate the Okra

    Add the sliced okra to the pot and stir to combine. Cook for another 5 minutes.

    Pour in the vegetable broth, bringing the mixture to a boil. Once boiling, reduce the heat to low and let it simmer for 20 minutes, stirring occasionally.
