    Rinse the oyster mushrooms under cold water to remove any dirt. Pat them dry and slice them into bite-sized pieces. Dice the tomatoes, chop the onion, and mince the garlic.

    In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until the onion turns translucent, about 5 minutes.

    Add the sliced oyster mushrooms to the pot and cook for another 5-7 minutes until they soften and release their moisture.

    Incorporate tomatoes

    Stir in the diced tomatoes and cook for an additional 5 minutes until the tomatoes start to break down.

    Mix in peanut butter

    Add the peanut butter and mix it well into the stew until fully incorporated.

    Add salt, black pepper, cumin, and paprika to the pot. Stir well and allow to simmer for 10 minutes, letting the flavors meld together.
