    In a large mixing bowl, combine the malted barley and malted wheat. Stir them together to ensure an even mix.

    In a large pot, bring 4 cups of water to a boil over medium heat. This will be used for mashing the malt.

    Once the water is boiling, remove it from heat and slowly pour in the mixed malts. Stir continuously to prevent clumping. Cover the pot and let it sit for about 60 minutes. This process converts the starches in the grains into sugars.

Fermentation

    After 60 minutes, cool the malt mixture to around 70°F (21°C). You can place the pot in a cold water bath to speed up the cooling process.

    Add the Yeast

    Once cooled, add 1 teaspoon of brewer's yeast to the mixture and stir gently. If desired, add hops and sugar for flavoring.

    Ferment the Malt

    Cover the pot with a clean cloth and let it sit in a warm, dark place for 5-7 days. Check daily for bubbles indicating fermentation.

    After fermentation is complete, transfer the malt to clean bottles using a siphon. Seal the bottles tightly.
