Lamb Preparation

    Season the Lamb

    In a small bowl, mix together the olive oil, garlic powder, dried rosemary, dried thyme, salt, and black pepper. Rub this mixture all over the lamb chops and allow them to marinate for at least 30 minutes.

    Cook the Lamb

    Preheat your grill or skillet over medium-high heat. Once hot, add the marinated lamb chops and cook for about 4-5 minutes on each side, or until cooked to your desired doneness and the outside is nicely browned. Remove from heat and let rest for 5 minutes before serving.

    Cook the Potatoes

    Peel and chop the potatoes into equal-sized chunks. Place them in a large pot, cover with water, and add a pinch of salt. Bring to a boil over high heat, then reduce to a simmer and cook for about 15-20 minutes, or until the potatoes are tender.

    Make the Mashed Potatoes

    While the potatoes are cooking, finely chop the garlic cloves. In a small saucepan, melt the butter over medium heat and add the chopped garlic. Sauté for 2-3 minutes until fragrant but not browned. Drain the potatoes and return them to the pot. Add the garlic butter and milk, then mash until smooth. Season with additional salt and black pepper to taste.

    Prepare the Vegetables

    Wash and cut the broccoli into florets and slice the carrots into thin rounds.

    Steam the Vegetables

    In a steamer basket over boiling water, add the broccoli and carrots. Cover and steam for about 5-7 minutes until the vegetables are tender but still vibrant in color. Drizzle with olive oil and season with salt and black pepper before serving.
