Prepare the Lamb

Season the Lamb
In a small bowl, combine minced garlic, chopped rosemary, thyme, paprika, salt, and black pepper. Mix well to create a paste.

Marinate
Rub the herb and spice paste all over the lamb chops. Drizzle with olive oil and let marinate for at least 30 minutes at room temperature or up to 4 hours in the refrigerator.
Cook the Lamb

Preheat the Grill or Oven
Preheat your grill or oven to medium-high heat (about 400°F or 200°C).

Cook the Lamb Chops
Place the marinated lamb chops on the grill or a baking sheet. Cook for about 4-5 minutes on each side for medium-rare, or until they reach your desired doneness.

Rest the Lamb
Once cooked, remove the lamb chops from the heat and let them rest for 5 minutes before serving.

Prepare Asparagus
Trim the woody ends off the asparagus and rinse them under cold water.

Cook Asparagus
Place the seasoned asparagus on a baking sheet and roast in the oven (or grill alongside the lamb) for about 10-12 minutes, or until tender.

Squeeze fresh lemon juice over the cooked asparagus before serving for extra flavor.
