Tea Base

Method

Brewing the Tea

    Boil Water

    In a large pot, bring 4 cups of water to a boil.

    Steep Tea

    Once boiling, remove from heat and add 4 black tea bags. Let steep for about 15 minutes.

    Add Sugar

    Remove the tea bags and stir in 1 cup of sugar until dissolved. Allow the tea to cool to room temperature.

Fermentation Process

    Prepare Fermentation Jar

    Once the tea has cooled, pour it into a clean glass jar that holds at least 1 quart.

    Add Starter Tea

    Add 1 cup of starter tea to the cooled sweetened tea.

    Introduce SCOBY

    Gently place the SCOBY on top of the liquid in the jar.

    Cover and Ferment

    Cover the jar with a clean cloth or coffee filter secured with a rubber band. Let it sit in a warm, dark place for 7 to 14 days.

Flavoring and Bottling

    Taste Test

    After 7 days, start tasting the kombucha daily until it reaches your preferred tanginess.

    Add Flavorings (optional)

    If desired, add 1 tablespoon of grated ginger and 1 cup of your chosen fruit to the kombucha.

    Bottling

    Using a funnel, pour the kombucha into clean bottles, leaving about 1 inch of space at the top. Seal the bottles tightly.

    Second Fermentation (optional)

    Let the bottles sit at room temperature for an additional 3 to 7 days to develop carbonation, then refrigerate.
