Method

Preparation

  1. 1

    Prepare the Vegetables

Start by peeling and finely chopping the onion. Rinse the spinach thoroughly under cold water, then chop it coarsely. If using fresh sweet corn, remove the kernels from the cob; if using canned or frozen corn, ensure it's drained and thawed.

Cooking

  1. 2

    Cook the Onions

In a large skillet, heat the palm oil over medium heat. Once hot, add the chopped onion and sauté for about 3-4 minutes, or until it becomes translucent and fragrant.

  2. 3

    Add the Sweet Corn

Stir in the sweet corn kernels into the skillet with the onions. Cook for an additional 5 minutes, stirring occasionally, until the corn is heated through.

  3. 4

    Incorporate Spinach

Add the chopped spinach to the skillet. Stir well to combine with the onion and corn mixture. Cook for 2-3 minutes, or until the spinach wilts down.

  4. 5

    Season the Mixture

Sprinkle the salt and black pepper over the vegetable mixture. Stir thoroughly to ensure the seasonings are evenly distributed. Cook for another minute, then remove from heat.
