Marinade Preparation

    Prepare the Marinade

    In a large bowl, combine the yogurt, ginger-garlic paste, lemon juice, red chili powder, turmeric powder, garam masala, and salt. Mix well to create a smooth marinade.

    Marinate the Chicken

    Add the chicken thighs to the marinade, ensuring they are well coated. Cover and refrigerate for at least 1 hour, or preferably overnight for the best flavor.

    Heat the Oil

    In a large skillet or wok, heat the palm oil over medium heat until it is hot but not smoking.

    Sauté the Onions

    Add the sliced onions to the hot oil and sauté until they are golden brown and translucent, about 5-7 minutes.

    Cook the Chicken

    Add the marinated chicken to the skillet. Stir well to combine with the onions, and cook for about 15-20 minutes, stirring occasionally, until the chicken is fully cooked and the juices run clear.

    Add Bell Peppers

    In the last 5 minutes of cooking, add the sliced bell peppers to the skillet. Stir until they are slightly softened.

    Remove from heat and garnish with fresh coriander leaves. Serve hot with naan or rice.
