Method

Prepare the Meat

  1. 1

    Cut the Meat

Cut the steak, brisket, and bottom roast into thin strips, about 1 inch wide.

  2. 2

    Marinate the Meat

In a large mixing bowl, combine the meat strips with vegetable oil and the suya spice mix. Ensure all pieces are well coated. Cover and let marinate for at least 2 hours, preferably overnight in the refrigerator.

Make the Suya Spice Mix

  1. 3

    Combine Ingredients

In a bowl, mix together ground peanuts, paprika, cayenne pepper, garlic powder, onion powder, salt, and black pepper until well combined.

Prepare the Sides

  1. 4

    Prepare the Yams

Peel the yams and cut them into thick slices. In a large pot, bring water to a boil. Add the yam slices and cook until tender, about 15-20 minutes. Drain and set aside.

  2. 5

    Fry the Yams

In a frying pan, heat 2 tablespoons of vegetable oil over medium heat. Add the cooked yam slices and fry until golden brown and crispy on both sides. Sprinkle with salt.

Grill the Meat

  1. 6

    Preheat the Grill

Preheat your grill to medium-high heat.

  2. 7

    Skewer the Meat

Thread the marinated meat strips onto skewers.

  3. 8

    Grill the Meat

Place the skewers on the grill and cook for about 10-15 minutes, turning occasionally, until the meat is cooked through and has a nice char.

Serve the Dish

  1. 9

    Plate the Food

Serve the grilled meat alongside the fried yams. Optionally, garnish with sliced tomatoes, onions, and bell peppers.
