    Prepare the Ingredients

    Chop the onions, slice the scallions, dice the tomatoes, and mince the garlic. Set aside.

Cooking

    Sear the Goat Meat

    In a large pot, heat the olive oil over medium-high heat. Add the cubed goat meat and sear until browned on all sides, about 5-7 minutes. Remove the meat and set aside.

    Sauté the Vegetables

    In the same pot, add the chopped onions and sauté until they are translucent, about 3-4 minutes. Then add the minced garlic and sauté for an additional 1 minute.

    Add Tomatoes and Spices

    Add the diced tomatoes, thyme, bay leaves, cumin, paprika, salt, and black pepper to the pot. Stir to combine and cook for another 5 minutes, allowing the tomatoes to break down.

    Combine Meat and Simmer

    Return the seared goat meat to the pot, add enough water to cover the meat, and bring to a boil. Reduce heat, cover, and let it simmer for about 1.5 to 2 hours, or until the meat is tender.

    Finish with Scallions

    Once the goat meat is tender, stir in the sliced scallions and let it cook for an additional 5 minutes. Adjust seasoning if necessary.
