    Prepare the Ingredients

    Wash and chop the goat meat into bite-sized pieces. Dice the bell peppers, tomatoes, and onions. Mince the garlic cloves and ginger. Slice the habanero peppers, removing seeds for less heat if desired.

Cooking

    Cook the Goat Meat

    In a large pot, add the chopped goat meat and 6 cups of water. Bring to a boil over medium-high heat. Skim off any foam that rises to the surface.

    Add Aromatics

    Once the water is boiling, add the diced onions, minced garlic, and ginger to the pot. Stir well and reduce the heat to medium-low. Cover and let simmer for 30 minutes.

    Incorporate Vegetables

    Add the diced tomatoes, bell peppers, and sliced habanero peppers to the pot. Stir to combine and let simmer for an additional 15 minutes.

    Season the Soup

    Add thyme, bay leaves, salt, and black pepper to the pot. Adjust the seasoning to your taste. Allow the soup to simmer for another 10-15 minutes until the goat meat is tender and the flavors meld.

    Remove the bay leaves and serve the goat pepper soup hot. Enjoy with a side of rice or bread if desired.
