Method

Preparation

  1. 1

    Peel the Plantains

Using a sharp knife, cut off the ends of each plantain. Make a shallow slit along the length of the plantain, being careful not to cut too deep, and gently peel off the skin.

  2. 2

    Slice the Plantains

Cut the peeled plantains diagonally into 1/2 inch thick slices. This will help them cook evenly and become crispy.

Cooking

  1. 3

    Heat the Oil

In a large frying pan, heat the cooking oil over medium heat until hot but not smoking. You can test the oil by dropping a small piece of plantain in; if it sizzles, the oil is ready.

  2. 4

    Fry the Plantains

Carefully add the sliced plantains to the hot oil in a single layer, making sure not to overcrowd the pan. Fry for about 2-3 minutes on each side or until they are golden brown and crispy.

  3. 5

    Drain and Season

Once the plantains are cooked, use a slotted spoon to remove them from the oil and place them on a plate lined with paper towels to drain excess oil. While they are still hot, sprinkle them with salt and, if desired, cayenne pepper for extra flavor.

Serving Suggestions

  1. 6

    Plate the Fried Plantains

Arrange the crispy fried plantains on a serving platter. Serve immediately with lime wedges and fresh cilantro on the side for garnish.
