Prepare the Eggplant
Wash and chop the eggplants into small cubes. Set aside.

Chop the Vegetables
Peel and finely chop the garlic cloves and onion. Dice the tomatoes.
Cooking

Sauté the Onions and Garlic
In a large skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté until the onion is translucent, about 5 minutes.

Cook the Eggplant
Add the chopped eggplant to the skillet. Stir well and cook for about 10 minutes, until the eggplant is tender.

Add Tomatoes and Seasonings
Stir in the diced tomatoes, basil, oregano, salt, and black pepper. Mix well and bring to a simmer.

Simmer the Sauce
Reduce the heat to low and let the sauce simmer for about 15-20 minutes, stirring occasionally, until it thickens to your desired consistency.
