    Dice the onion, mince the garlic, and chop the cilantro. Cut the chicken thighs into bite-sized pieces.

    Sauté the Aromatics

    In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes until translucent. Add the minced garlic and sauté for an additional 1 minute.

    Add the chicken pieces to the pot and cook until browned on all sides, about 5-7 minutes.
